Living Bread baking manual

Introduction

 Living bread baking is a part of our project “Bread Water and Peace for all” involving a rescuing plan for helping people to survive when threatened by starvation caused by severe draughts. It is based on production of a unique delicious flexible sprout mix used for baking living bread, nuggets, vegan beefs, pizzas and the production of a protein powder that can be used for i.e., smoothies, protein/fruit bars or sandwich spread. Food preparation is made in a solar dryer or electric dryer at a temperature around 40°C. Living bread is extremely nutritious and very rich in enzymes, vitamins, proteins and minerals. The living bread can be stored for very long time even more than a year in dry places. The food is produced with Eco-friendly small-scale farming that will curb soil erosion and bring the monoculture era to history. Organic waste and humanure will be recycled by soilification for topsoil production, protection of unique biodiversity, and restoration of denuded land. Finally, our initiative will pave the for harmonic coexistence and global peace since a plant-based diet induces harmonic alpha waves in your brain and has a balanced phosphorus/calcium ratio close to 1:2 which you find in mother milk. In meat, it is 50:1causing a fall in calcium levels which leads to irritated and aggressive behavior.

There are many alternatives for baking Living Bread. You can use,

-          Electric high-capacity dryers with 7 -9 baking plates

- High-capacity solar dryer with 9-18 baking plates

-          MicroGreenHouse solar dryer with 1-4 baking sheets.

Living bread is usually made from sprouted beans, cereals, fruits, vegetables, nuts, and different spices. Sprouted beans and cereals will be included in most recipes. The beans and cereals will be soaked for 4 - 12 hours and then put in sprouting bags for 3-32 hours.

Green grams and Black grams sprouts are ready within 3 - 4 hours. Beans like rose coco, Kenya red kidney, Wairimu, Mwezi moja will take longer time.

The chia seeds will be used for their excellent gluing properties.

Basic Recipe,

2 plates Living Bread

1 dl Chia seeds, soaked for 20 minutes

1 dl pumpkin seeds and 1 dl sunflower seeds soaked for 6 hours

Triple sprout mix: 1 dl Green grams,1 dl buckwheat, 1 dl lentils.

4 - color vegetable mix:, Yellow, Red ,White, and Green

1 carrot, 1 red beat, 200 g white cabbage, 150 g green leaves

¼ white onion

1 read onion

1/2 tsp salt

2 tsp curry or paprika powder

2 tsp oregano

1/4 tsp black pepper

Green leaves like moringa or any tasty edible green leaves, cultivated or wild. The use of wild plants is strongly recommended since they most often are far more nutritious than cultivated ones.

Soak the sprout seed mix for up to 8 hours and sprout for up to 32 hours together in a glass jar or a natural-colored organic sprout bag.

Mix sprouts, pumpkin seeds, sunflower seeds, red beat, carrot, green leaves, chopped, white onion, red onion, and spices in a food processor and place in a bowl. Alternatively, you can cut them with a knife.

Add soaked chia seeds and mix to a smooth dough. Spread the dough over a baking paper sheet to around 3 mm thickness. Cut a pattern in the dough for lowering drying time. You can shape the pattern depending on what you want to bake, bread, nuggets, beef or pizza slices will all have their own patterns. The normal size for bread is 4x4 cm

 For freezing, the drying time will be about 35 minutes on one side. If you want to store them for up to three days, you will need a drying time of at least 2 hours, one hour on each side (1+1) depending on the thickness. For long storage, the drying time will be up to 7 hours (4+3).

Another alternative is to make a protein powder of the living bread once it has dried well. The protein powder can be used in breakfast dishes, soups, or any other dish.

Living cakes

Use fruits and nuts in exchange for onions, vegetables and spices and bake in the same way as for living bread.

Living Yummies

By using the sproutmix powder version of well-dried living bread you can make delicious high-protein yummies. You can also use the fresh triple sprout mix

1/2 dl sproutmix powder or 3 dl fresh sprouts

1 dl dates

2 dl groundnuts, soaked for 6-10 hours

4 small bananas

4 slices pineapples

Sugarcane juice or lemon juice (optional)

Mix everything in a food processor. Form a dough around 1 cm thick. Cut a pattern in the dough around 3cm wide and 10 to 15 cm long. Bake it until the surface is dry.

Try to find out the optimal baking time from your own experience.

All the ingredients in the recipes above can be changed due to seasonal accessibility or, personal taste.

The Micro Greenhouse Solar dryer, MGS, can be tunnel-shaped and made from branches and covered by a mosquito net and a piece of transparent polyethylene. The MGS is temperature controlled by opening the PE cover in both ends of the MGS.. Try to keep the temperature between 35 and 42°C. Two hours before and after midday you can lower the temperature by adjusting the size of the opening of the polyethylene cover.
